Cuisine of Kadapa

We live in a country of varieties and find the difference in everything including culture, clothing, customs, food etc. People from North India differ entirely from people of South India or East India. Although Kadapan cuisine is typically South Indian, but variations used in the preparation of food makes it totally exclusive and diverse. Let us take a look at some of the delicacies of Kadapan Cuisine:

Raagi Sangati
It is also known as Ragi Sankanti or Ragi Mudde among the locals. It is made from  ragi (millet) flour, rice, water and salt and is usually served with some kind of curry. Some people also offer the same with Gongura pickle and curd. It is a must have in summer months due to its property of beating the heat.

Boti Curry
It is another famous dish of Kadapa cuisine. Boti is nothing but the visceral parts of the lamb. It is made by adding many spices including poppy seeds, cardamom, cloves, garlic, ginger, green chillies, tamarind, onion, salt and chilli powder to the boti. The preparation is extremely spicy and can be served with rice.

Natukodi Chicken
It is a special preparation of chicken in Andhra style by adding Guntur chilli spice mix and coconut together. It is very spicy and delicious in taste. The paste added in this chicken curry is made from poppy seeds, coconut, guntur chili powder, dry roasted coriander seeds, turmeric powder, ginger, salt and garlic.

Paya Curry
Paya means foot or trotter in Urdu language. In case of this recipe the foot is of lamb. This curry is made of lamb foot by adding many spices including turmeric powder, poppy seeds powder, curd, garam masala, salt, onions, mint and green chillies at the time of preparation. All of these spices give this a curry a unique and intense flavor.
